Porfidio “The Juniper Tree” is a distinctive agave-based gin that reimagines traditional gin through the lens of agave spirit craftsmanship. Produced in small batches, this expression combines classic botanical structure with innovative techniques and a uniquely Mexican identity.

At its core, the spirit is built around freshly fermented and distilled juniper berries—rather than the more common dried juniper infusion—resulting in a brighter, more vivid aromatic profile. This foundation is layered with a curated selection of botanicals, including agave flowers, tuna cactus blossoms, and pitaya (dragon fruit) flowers, each individually macerated in agave spirit and distilled to preserve their character.

These elements are then brought together and integrated with agave stem juice, before undergoing an extended maturation process in oak barrels. This additional aging step introduces subtle depth, structure, and warmth not typically found in traditional gin.

The result is a complex and unconventional spirit, offering lifted juniper, floral and vegetal notes, soft fruit undertones, and a rounded, lightly oaked finish.

Presented in the Kutani Edition bottle, this release reflects Porfidio’s focus on craftsmanship, design, and originality.
